Textbook Barolo. Dried cherry, rose, truffles, leather, and earth, as well as dried woody spices and herbs. The palate is elegant, refined, and mellow, delivering restrained dried cherries in fine, well integrated tannins. Five generations of Fenocchios have made Barolos that consistently over-perform in competition with some of the most famous names in Barolo. 100% Nebbiolo from 30-year-old vines planted at 300 meters above sea level. Vineyards are southwest facing and rich in iron and calcareous clay. Named for the ancient tradition of submerging the cap for 90 days prior to racking, this wine then ages for 4 years in large Slavonian oak casks (30-50 hectoliters) prior to refinement in bottle before release. 4,000 bottles produced annually. Organic practicing, though not certified.
