The Soif D'Aillerurs is made from a manually harvested field blend of grapes (the three Grenaches, Clairette, Counoise, Cinsault, Muscat de Hambourg, Malbec) that are then pressed in entire bunches. Fermentation occurs in huge concrete vats over 7-days before bottling after 6-months without any oenological inputs. With no fining, no filtration and very minimal sulphite addition, this is a truly delicious example of great natural red wine!
