An assemblage of 50% Pinot Noir and 50% Pinot Gris from Alsace. The fruit comes from 70 year old vines planted on a clay/limestone soil. Only indigenous yeasts are used for the fermentation. After an élevage of 10 months in tronconic cuves, the wine was bottled without fining, filtration, or added SO2. Jean-François Ganevat makes more than a hundred cuvées simultaneously. "FanFan" as he is known is the 14th generation of winemakers to work in his family domaine since 1650s.
