Elemental is a fresh and textural ancestral method sparkler that is 50/50 Macabeo and Xarel-lo. Clean, precise, and bone dry, with salty minerals, nice weight, and fine and focused bubbles. Hand-harvested, de-stemmed, with one day of skin contact. Spontaneously fermented with ambient yeasts in stainless steel tanks, unfined and unfiltered. Ignacio and Anna Segui founded Vinyes Singulars in 2012 on the 300 acre farm due west of Barcelona that he grew up on, 50 acres of which are planted to organically farmed grape vines; of which many are 60+ years old. The Macabeo comes from 1 ha of vines planted in 1965 and the Xarel-lo from .5 ha of vines planted in 1980 in calcareous clay soils.
