Pure and focused with hints of pear, fig, and citrus, a round, supple mid-palate, and a zippy, refreshing finish. 20 year old vines from the Touraine region on clay soil with all levels of sand, gravel, flint, and quartz. Hand harvested and whole cluster pressed, fermented with natural yeast, an aged in stainless steel. There have been record of "le Tue-Boeuf" wines being enjoyed by kings of France and local nobility since the Middle Ages. Brothers Jean-Marie and Thierry took over for their father in the early 90s and are largely responsible for bringing the organic movement to the Loire. Thierry's daughter Zoe has since taken over for Jean-Marie. They move in and out of the AOC system due to their love of different varietals, but it has never affected their reputation, quality, or loyal customer base.
